Japan uses sushi to project raw power

Sushi - the Japanese cuisine once considered exotic - now ubiquitous in both fast food halls and high end restaurants around the world.

Its global appeal was confirmed by a recent Japanese government survey which found foreign tourists enjoy sushi above any other national dish. The combination of rice, vinegar and seaweed is so popular it's spawned more than 25-thousand restaurants outside Japan which turn over billions of dollars every year. Our next guest has been studying what he calls sushi's culinary colonisation of the world over the last twenty years and he's found some surprising things.
