Auckland chef aims to develop Pacific cuisine

Pacific people should stop feeling their food isn't good enough to appear of the menu of five star restaurants.

That's according to New Zealand based Tongan chef, Alex Kaihea, who wants Pacific cuisine to feature more in the region's tourist industry.

He recently appeared in the TV show Real Pasifik, alongside celebrity chef Robert Oliver, as part of efforts to showcase the region's food.

Alex Kaihea says the Pacific has excellent fresh ingredients and a long food tradition, but big hotels and resorts seem to be unaware of that, preferring European dishes.
